Where It All Began
Long before Gurugram became a city of glass towers, Sadar Bazar was already busy with shoppers, shopkeepers and the smell of frying bhature drifting through the lanes. Right in the middle of it, opposite National Store in Roshan Pura, stands Baljee — a red-boarded shopfront that has fed this neighbourhood for generations.
The recipes trace back to classic Pindi-style cooking, brought along and perfected over the decades. Nothing fancy, nothing rushed — just the same mildly spiced, creamy chole and pillowy-soft bhature that regulars grew up eating as children and now bring their own kids to try.
